This refreshing quinoa salad, featuring tangy cornichons, sun-dried tomatoes, and a zesty pomegranate molasses dressing, is a quick, low-carb option that's both healthy and satisfying.
Instructions
- Put the quinoa in a bowl.
- Pour enough water over it to cover and wash it thoroughly.
- Drain the water using a sieve and rinse well with plenty of water.
- Put the quinoa in boiling salted water and cook for 12 minutes.
- Cut the sun-dried tomatoes into small pieces.
- Dice the pickled cucumbers into small cubes.
- Finely chop the parsley and green onions.
- After draining the cooked quinoa, place it in a mixing bowl. At this stage, you can run it under cold water to cool it quickly.
- Add the chopped vegetables and canned corn to the bowl.
- Add olive oil, pomegranate molasses, and salt.
- Mix the salad well.
