Rice Pilaf with Barley Vermicelli

Prepare a quick and easy rice pilaf with barley vermicelli, featuring tender rice and crispy orzo sautéed in vegetable oil. Enhanced with a touch of butter, salt, and lemon juice, this vegan dish makes a perfect lunch option.

Ingredients

  1. 2 cups of rice
  2. 1/2 tea glass of orzo (barley vermicelli)
  3. 4 tablespoons vegetable oil
  4. 4 cups of hot water
  5. 4 teaspoons salt
  6. 1/2 teaspoon sugar
  7. 3-4 drops of lemon juice
  8. 1 tablespoon butter
  9. Black pepper (optional)

Instructions

  1. Add the oil and orzo to a pot and sauté until they change color.
  2. Add the rice and continue to sauté, stirring gently to avoid crushing the rice.
  3. When the rice becomes slightly crispy and separated, add the hot water.
  4. While it's boiling over high heat, add the salt, sugar, and lemon juice.
  5. Boil uncovered over high heat for 1-2 minutes, then cover and simmer on low heat until the water is absorbed.
  6. Once the heat is turned off, add the butter, stir until melted, and let it rest.
  7. Add black pepper if desired when serving. Enjoy your meal!
