Courgette Pie

Enjoy a healthy vegan Courgette Pie packed with grated zucchini, potatoes, carrots, and fresh herbs, baked to golden perfection. Served with a tangy yogurt and ranch sauce, it's a delightful appetizer or light meal.

Ingredients

  1. 2 medium zucchinis
  2. 2 medium potatoes
  3. 2 carrots
  4. 4-5 fresh green onion tops
  5. 1/4 bunch of parsley
  6. 1/4 bunch of dill
  7. 1 onion
  8. 3 medium eggs
  9. Just under 1 tea glass of olive oil
  10. Just under 1 cup of flour
  11. 1 teaspoon baking powder
  12. Black pepper
  13. Cumin
  14. Cajun seasoning (I think it complements dishes well)
  15. Salt

For the yogurt sauce:

  1. 2 tablespoons strained yogurt
  2. 2 tablespoons ranch dressing
  3. 1 teaspoon dried mint
  4. Salt

Instructions

  1. First, grate the zucchini, potatoes, and carrots, and squeeze out all the moisture.
  2. Then, chop the onions and dill and add them to the mixture.
  3. In a bowl, whisk together the eggs, oil, spices, and flour.
  4. Add the mixture to the grated and chopped vegetables.
  5. Mix well and spread the mixture evenly in a baking tray.
  6. Bake in a preheated oven at 180°C (350°F) for about 40-45 minutes, or until the top is golden brown.
  7. Once it has slightly cooled, cut into slices and serve with the sauce. Enjoy!
