A flavorful and healthy vegan eggplant dish featuring golden-fried eggplants and blistered green peppers simmered in a savory tomato sauce with garlic and red pepper flakes. Perfect for a nutritious dinner.

Ingredients

  1. 2 eggplants
  2. 6 green peppers
  3. 2 medium-sized tomatoes
  4. 1/2 tablespoon tomato paste
  5. 1 teaspoon red pepper flakes
  6. 1 clove of garlic

For sautéing:

  1. 2 green peppers
  2. 1 red pepper
  3. 1 onion
  4. 1/2 tea glass of water
  5. Salt

Instructions

  1. Cut the eggplants into thick sticks as shown in the picture, soak them in salted water for 10 minutes, then drain and pat them dry with paper towels.
  1. Heat 1/2 cup of vegetable oil in a pan and start frying the eggplants until golden brown. Fry the green peppers until the ends are slightly blistered, then transfer them to another plate lined with paper towels.
  1. In the same pan, sauté the finely chopped peppers and onion. Cover the pan with a lid and let it cook until softened.
  1. Add the tomato paste, red pepper flakes, and garlic, and continue to sauté. Then add the chopped tomatoes and salt, cover the pan, and cook over medium heat, stirring occasionally.
  1. Once the tomatoes are cooked, add the water and let it simmer until the desired consistency is reached. Then add the fried eggplants and peppers, mix well, cover, and cook for another 10 minutes. Your dish is ready to serve.
