Bulgur Pilaf with Vegetables

A quick and easy vegan bulgur pilaf with vegetables, featuring sautéed onions, peppers, and tomatoes with aromatic spices. This hearty and nutritious lunch option is perfect for a satisfying meal.

Ingredients

  1. 2 cups of bulgur
  2. 1 tea glass of olive oil
  3. 1 onion
  4. 5-6 medium-sized peppers
  5. 2 tomatoes
  6. 1 teaspoon black pepper
  7. 1 teaspoon red pepper flakes
  8. Parsley (optional)
  9. 3 cups of hot water (adjust according to the hardness of your bulgur)

Instructions

  1. Sauté the onion in olive oil until softened, then add the peppers.
  1. After sautéing the peppers and onions for a bit, add the tomatoes and spices.
  1. If you like, you can also add a tablespoon of tomato paste for extra flavor.
  1. Finally, add the bulgur and sauté briefly, then add the hot water and let it cook.
  1. If you want to add parsley, you can add it at the end.
