A quick and easy vegan bulgur pilaf with vegetables, featuring sautéed onions, peppers, and tomatoes with aromatic spices. This hearty and nutritious lunch option is perfect for a satisfying meal.
Ingredients
- 2 cups of bulgur
- 1 tea glass of olive oil
- 1 onion
- 5-6 medium-sized peppers
- 2 tomatoes
- 1 teaspoon black pepper
- 1 teaspoon red pepper flakes
- Parsley (optional)
- 3 cups of hot water (adjust according to the hardness of your bulgur)
Instructions
- Sauté the onion in olive oil until softened, then add the peppers.
- After sautéing the peppers and onions for a bit, add the tomatoes and spices.
- If you like, you can also add a tablespoon of tomato paste for extra flavor.
- Finally, add the bulgur and sauté briefly, then add the hot water and let it cook.
- If you want to add parsley, you can add it at the end.
