Vegetarian Meatballs with Quinoa

These hearty vegetarian meatballs combine quinoa, lentils, and spices, delivering a satisfying and flavorful dish that's crispy on the outside and tender on the inside.
Ingredients
- 1 bowl of white quinoa
- 1 small cup of cooked lentils
- Half a small cup of fine bulgur
- 1 medium-sized potato
- 1 onion
- 2 cloves of garlic
- 1 tablespoon of flour
- 1 egg
- Salt to taste
- 1 teaspoon of allspice
- 1 teaspoon of crushed red pepper
- 1 teaspoon of cumin
- 1 teaspoon of black pepper
For frying:
- 1 small cup of vegetable oil
Instructions
- Rinse the quinoa thoroughly. Boil it in hot water for about 3 minutes.
- Cut the potatoes into very small cubes and boil them in hot water for 5 minutes.
- Soak the bulgur with 2 tablespoons of hot water.
- Finely chop the onions and grate the garlic.
- Once the boiled ingredients are cooled by rinsing with cold water, transfer them to a suitable bowl.
- Add the finely chopped onion, grated garlic, salt, black pepper, cumin, allspice, crushed red pepper, flour, and egg to the bowl and knead well.
- Shape the mixture into patties the size of hamburger patties.
- Heat oil in a suitable non-stick pan and fry the patties until both sides are golden brown.
