A creamy and comforting vegetable soup made with a medley of finely diced carrots, potatoes, bell peppers, and zucchini, sautéed with garlic and onions. Enriched with a touch of cream and fresh dill, this healthy, vegetarian soup is quick to prepare and perfect for a wholesome meal.
Ingredients
- 3 tablespoons vegetable oil
- 2 cloves garlic, finely chopped
- 1 onion, finely chopped
- 2 heaping tablespoons flour
- 1 potato, finely diced
- 1 carrot, finely diced
- 1 red bell pepper, finely diced
- 1 green zucchini, finely diced
- 1 tea glass canned peas
- 1 handful dill, chopped
- 1 box cream (200 ml)
- Salt
- 6-7 cups hot water
Instructions
- Place a pot on the stove and add the vegetable oil. Add the finely chopped onion and garlic, and sauté for 2-3 minutes.
- Then add the finely diced carrot and continue to sauté.
- After sautéing the carrots for a bit, add the finely diced potato, red bell pepper, and green bell pepper, and sauté for another 2 minutes.
- Next, add the flour and stir for 1-2 turns. Add the peas and water, and stir again.
- Once the soup starts to boil, reduce the heat and let it simmer over medium heat.
- After the vegetables have softened, add the cream to the soup and stir. Let the soup simmer for a bit longer.
- Finally, add the salt and finely chopped dill, stir once more, and remove from heat.
- Once the initial heat has dissipated, your creamy vegetable soup is ready to serve. Enjoy!
