Vegetable Soup

A creamy and comforting vegetable soup made with a medley of finely diced carrots, potatoes, bell peppers, and zucchini, sautéed with garlic and onions. Enriched with a touch of cream and fresh dill, this healthy, vegetarian soup is quick to prepare and perfect for a wholesome meal.

Ingredients

  1. 3 tablespoons vegetable oil
  2. 2 cloves garlic, finely chopped
  3. 1 onion, finely chopped
  4. 2 heaping tablespoons flour
  5. 1 potato, finely diced
  6. 1 carrot, finely diced
  7. 1 red bell pepper, finely diced
  8. 1 green zucchini, finely diced
  9. 1 tea glass canned peas
  10. 1 handful dill, chopped
  11. 1 box cream (200 ml)
  12. Salt
  13. 6-7 cups hot water

Instructions

  1. Place a pot on the stove and add the vegetable oil. Add the finely chopped onion and garlic, and sauté for 2-3 minutes.
  2. Then add the finely diced carrot and continue to sauté.
  3. After sautéing the carrots for a bit, add the finely diced potato, red bell pepper, and green bell pepper, and sauté for another 2 minutes.
  4. Next, add the flour and stir for 1-2 turns. Add the peas and water, and stir again.
  5. Once the soup starts to boil, reduce the heat and let it simmer over medium heat.
  6. After the vegetables have softened, add the cream to the soup and stir. Let the soup simmer for a bit longer.
  7. Finally, add the salt and finely chopped dill, stir once more, and remove from heat.
  8. Once the initial heat has dissipated, your creamy vegetable soup is ready to serve. Enjoy!
