Enjoy a comforting bowl of Taco Soup, a quick and healthy snack made with sautéed onions, garlic, and carrots, combined with red beans, corn, and a flavorful broth, perfect for a satisfying meal.

Ingredients

  1. 1 chopped onion
  2. 3 cloves of crushed garlic
  3. 1.5 cups cooked red beans
  4. 1 grated carrot
  5. A small bowl of corn kernels
  6. 1 chopped tomato (I don't buy tomatoes in this season, so I used a little tomato paste)
  7. Some Mexican pepper or Albanian pepper (optional)
  8. 4 tablespoons olive oil
  9. 6 cups beef broth or water
  10. Salt, black pepper, cumin

Instructions

  1. Sauté the onion and garlic in oil until they turn golden.
  2. Add the carrot and continue to sauté.
  3. Add the tomato or tomato paste, corn, spices, and peppers, and cook for a little while.
  4. Add the hot broth or water.
  5. Once the vegetables are tender, add the beans, reduce the heat, and cook until everything is soft.
  6. Enjoy your meal!
