Enjoy a comforting bowl of Taco Soup, a quick and healthy snack made with sautéed onions, garlic, and carrots, combined with red beans, corn, and a flavorful broth, perfect for a satisfying meal.
Ingredients
- 1 chopped onion
- 3 cloves of crushed garlic
- 1.5 cups cooked red beans
- 1 grated carrot
- A small bowl of corn kernels
- 1 chopped tomato (I don't buy tomatoes in this season, so I used a little tomato paste)
- Some Mexican pepper or Albanian pepper (optional)
- 4 tablespoons olive oil
- 6 cups beef broth or water
- Salt, black pepper, cumin
Instructions
- Sauté the onion and garlic in oil until they turn golden.
- Add the carrot and continue to sauté.
- Add the tomato or tomato paste, corn, spices, and peppers, and cook for a little while.
- Add the hot broth or water.
- Once the vegetables are tender, add the beans, reduce the heat, and cook until everything is soft.
