A comforting and nutritious strained lentil soup featuring tender meat bones and a rich, creamy texture. This healthy, low-carb soup is finished with a flavorful sauce of olive oil, butter, and red pepper powder, perfect for a satisfying lunch.
Ingredients
- A few pieces of meat with bones
- 1 cup of red lentils
- 8 cups of water
- 1 tablespoon of flour
- 1 whole onion
- Salt
For the sauce on the surface of the soup:
- 4 tablespoons of olive oil
- 2 tablespoons of butter
- 1 teaspoon of red pepper powder
Instructions
- Wash the lentils thoroughly and place them in a pot. Add the bones, onion, 8 cups of water, and salt. Let it simmer on low heat.
- While it is cooking, toast 1 tablespoon of flour in a non-stick pan until its aroma is released, then turn off the heat.
- Remove the bones from the soup and pass the soup through a sieve using the back of a spoon.
- Mix the toasted flour with 1 cup of water, then add it to the strained soup while stirring. Let it simmer for a few minutes and then turn off the heat.
- For the sauce: Melt the oils in a pan, and when they are slightly hot, add the pepper powder. Stir and let it cook for a moment, then turn off the heat.
- Pour the sauce over the soup when serving. Add some lemon juice and black pepper, and enjoy!
