Squash Casserole

A healthy and quick squash casserole with golden zucchini wedges, seasoned with a blend of spices and baked to perfection.

Ingredients

  1. 2 large zucchinis
  2. 1 egg
  3. 3 tablespoons cornmeal
  4. 2 tablespoons flour
  5. 1/2 bottle mineral water
  6. 1/2 teacup milk
  7. 1/2 teacup vegetable oil
  8. 1/2 packet baking powder
  9. 1 teaspoon dried mint
  10. 1 teaspoon red pepper powder
  11. 1 teaspoon black pepper
  12. 1 teaspoon salt
  13. 1/2 teaspoon turmeric

Instructions

  1. Wash the zucchinis. Cut off the top and bottom ends.
  2. Cut the zucchinis in half, then slice them lengthwise into thick wedges.
  3. Mix together the sauce ingredients.
  4. Place the zucchini wedges in a greased baking tray and coat them with the sauce.
  5. Bake in a preheated oven at 200°C (392°F) until golden brown.
  6. Serve hot. Enjoy!
