Quick and easy Spaghetti Squash recipe featuring zucchini, sautéed onions, and crispy chickpeas, topped with garlic yogurt. A healthy, gluten-free meal that's perfect for a nutritious lunch or dinner.

Ingredients

  1. 1 medium zucchini
  2. 1 medium onion
  3. 1 teaspoon butter
  4. 1 tablespoon olive oil
  5. 4-5 tablespoons yogurt
  6. 1 clove garlic
  7. Cooked chickpeas
  8. Salt
  9. Black pepper
  10. Ground paprika

Instructions

  1. Slice the zucchini into thin, long strips using a peeler or knife.
  2. Dice the onions finely and place them in a pot with olive oil.
  3. After 1-2 minutes, add the zucchini and stir. When the zucchini is nearly cooked, add the butter and salt.
  4. Toss the cooked chickpeas with spices and a tablespoon of oil, then bake in the oven or air fryer until slightly crispy.
  5. Transfer the zucchini to a serving plate, top with garlic yogurt, and add the chickpeas on top.
