Delicious and healthy roasted pepper soup, featuring roasted red bell peppers blended with garlic, pepper paste, and creamy milk. This comforting vegetarian soup is perfect for a nutritious meal.

Ingredients

  1. 3 red bell peppers
  2. 2 red peppers (for stuffing)
  3. 5 cloves of garlic (chopped)
  4. 5 tablespoons vegetable oil
  5. 1 tablespoon butter
  6. 2 tablespoons flour
  7. 1 cup milk (220 ml)
  8. 1 tablespoon pepper paste
  9. 1 liter boiling water
  10. 1 tablespoon ground pepper
  11. 2 teaspoons salt

Instructions

  1. Roast the peppers in the oven. After roasting, peel the skins and chop them into small pieces.
  2. Add vegetable oil to a pot. Add the flour and stir to combine.
  3. Add the garlic and roasted peppers, and stir again. Pour in the pepper paste and spices.
  4. Now add the water, milk, and butter to the pot, and stir until it starts to boil.
  5. Once boiling, blend the mixture with an immersion blender until smooth. The soup is ready to serve.
