This hearty and nutritious protein-rich soup combines red lentils, rice, bulgur, and optional ground meat in a comforting broth. Infused with tomato paste, pepper paste, and dried mint, it's cooked to perfection in a slow cooker or pressure cooker for a warm, satisfying meal.

Ingredients

  1. 1 cup red lentils
  2. 1 onion
  3. 1 tablespoon rice
  4. 1 tablespoon bulgur
  5. 1 tablespoon fine bulgur
  6. 1/2 tablespoon tomato paste
  7. 1/2 tablespoon pepper paste
  8. 1 teaspoon dried mint
  9. Black pepper
  10. 1 tablespoon butter
  11. 2 tablespoons vegetable oil
  12. Salt
  13. Ground meat, the size of an egg (optional)

Instructions

  1. We put the butter and vegetable oil in a pot. Chop the onion into small pieces and sauté it with the ground meat in the oil. Add the tomato paste, pepper paste, and dried mint.
  2. Then add the lentils, bulgur, and rice, and sauté them as well.
  3. Add water and salt, and let it cook. I cook it in a pressure cooker for 30 minutes. In a regular pot, it takes 40 minutes.
