This hearty and nutritious protein-rich soup combines red lentils, rice, bulgur, and optional ground meat in a comforting broth. Infused with tomato paste, pepper paste, and dried mint, it's cooked to perfection in a slow cooker or pressure cooker for a warm, satisfying meal.
Ingredients
- 1 cup red lentils
- 1 onion
- 1 tablespoon rice
- 1 tablespoon bulgur
- 1 tablespoon fine bulgur
- 1/2 tablespoon tomato paste
- 1/2 tablespoon pepper paste
- 1 teaspoon dried mint
- Black pepper
- 1 tablespoon butter
- 2 tablespoons vegetable oil
- Salt
- Ground meat, the size of an egg (optional)
Instructions
- We put the butter and vegetable oil in a pot. Chop the onion into small pieces and sauté it with the ground meat in the oil. Add the tomato paste, pepper paste, and dried mint.
- Then add the lentils, bulgur, and rice, and sauté them as well.
- Add water and salt, and let it cook. I cook it in a pressure cooker for 30 minutes. In a regular pot, it takes 40 minutes.
