Quinoa Salad with Purslane

This vibrant quinoa salad with fresh purslane and a zesty pomegranate dressing is a healthy, quick, and easy vegetarian dish, perfect for a light and refreshing meal.
Ingredients
- 2 cups of quinoa
- 1 bunch of purslane
- 3 green onions
- A handful of parsley
- 4-5 fresh basil leaves
- 2 cucumbers
- 1 onion
- 1 tablespoon of tomato paste
- 1 teaspoon of sumac
- 1 teaspoon of dried mint
- Salt
- Black pepper
- Plenty of olive oil
- A handful of pumpkin seeds
For the sauce:
- Juice of 2 lemons
- 1 tablespoon of pomegranate molasses
- 2 cloves of crushed garlic
Instructions
- Soak the quinoa in water for 5 minutes, then rinse and drain well.
- Boil the quinoa in plenty of salted water for 10-12 minutes (do not overcook, it should not become mushy). Drain immediately and let it cool.
- In a pan with olive oil, sauté the finely chopped onion.
- Add the tomato paste and sauté until fragrant.
- Add the sautéed mixture to the quinoa.
- Add the chopped greens and mix well.
- Mix the dressing ingredients and add them to the quinoa mixture, then mix again. Enjoy your meal!
