This refreshing quinoa salad, featuring tangy cornichons, sun-dried tomatoes, and a zesty pomegranate molasses dressing, is a quick, low-carb option that's both healthy and satisfying.

Ingredients

  1. 1 cup quinoa
  2. 7-8 cornichon pickles
  3. 6 sun-dried tomatoes
  4. 1/4 bunch of parsley
  5. 1 green onion
  6. 3 tablespoons canned corn
  7. 3 tablespoons olive oil
  8. 3 tablespoons pomegranate molasses
  9. 1 teaspoon salt

For cooking the quinoa:

  1. Hot water
  2. 1 teaspoon salt

Instructions

  1. Put the quinoa in a bowl.
  2. Pour enough water over it to cover and wash it thoroughly.
  3. Drain the water using a sieve and rinse well with plenty of water.
  4. Put the quinoa in boiling salted water and cook for 12 minutes.
  5. Cut the sun-dried tomatoes into small pieces.
  6. Dice the pickled cucumbers into small cubes.
  7. Finely chop the parsley and green onions.
  8. After draining the cooked quinoa, place it in a mixing bowl. At this stage, you can run it under cold water to cool it quickly.
  9. Add the chopped vegetables and canned corn to the bowl.
  10. Add olive oil, pomegranate molasses, and salt.
  11. Mix the salad well.
