These savory quinoa pea balls are a delightful, crunchy snack, packed with herbs and spices, and baked to a perfect golden brown.
Ingredients
- 1 cup of peas
- 1 cup of quinoa
- 1 small cup of cottage cheese
- 1 cup of oat flour (cornmeal, whole wheat flour, etc., can also be used)
- 1 egg
- 1 tablespoon of olive oil
- 1 packet of baking powder
- 1/2 bunch of parsley and dill
- 1 teaspoon of basil, mint, oregano
- 1 teaspoon of cumin
- 1 teaspoon of black pepper
- 1 teaspoon of crushed red pepper
- 1 teaspoon of salt
Instructions
- First, shell the peas and boil them.
- Rinse 1 cup of quinoa thoroughly by rubbing it, then soak it in water for 30-35 minutes.
- Boil the quinoa in hot water for about 10 minutes and then drain.
- Finely chop the parsley and dill.
- Mix all the ingredients except for the peas until well combined.
- Finally, add the peas and shape the mixture.
- Bake in a preheated oven at 180°C (350°F).
