These crispy quinoa patties, enriched with feta cheese and fresh vegetables, are a quick and healthy vegetarian snack or meal, baked to golden perfection.

Ingredients

  1. 1 cup of cooked quinoa
  2. 3-4 tablespoons of crumbled feta cheese
  3. 2 eggs
  4. 1 zucchini
  5. 1 carrot
  6. Dill
  7. Parsley
  8. Salt
  9. Black pepper

Instructions

  1. Cook the quinoa and place it in a large bowl.
  2. Grate the zucchini and carrot into the bowl.
  3. Finely chop the dill and parsley, then add them to the mixture.
  4. Add the feta cheese and eggs.
  5. Add the spices and mix everything well.
  6. Let the mixture rest in the refrigerator for about 30 minutes to firm up.
  7. Shape the mixture and place it on a baking tray lined with parchment paper.
  8. Bake at approximately 180°C (350°F) for 25-30 minutes.
  9. You can take them out once the tops are golden brown.
