These crispy quinoa patties, enriched with feta cheese and fresh vegetables, are a quick and healthy vegetarian snack or meal, baked to golden perfection.
Ingredients
- 1 cup of cooked quinoa
- 3-4 tablespoons of crumbled feta cheese
- 2 eggs
- 1 zucchini
- 1 carrot
- Dill
- Parsley
- Salt
- Black pepper
Instructions
- Cook the quinoa and place it in a large bowl.
- Grate the zucchini and carrot into the bowl.
- Finely chop the dill and parsley, then add them to the mixture.
- Add the feta cheese and eggs.
- Add the spices and mix everything well.
- Let the mixture rest in the refrigerator for about 30 minutes to firm up.
- Shape the mixture and place it on a baking tray lined with parchment paper.
- Bake at approximately 180°C (350°F) for 25-30 minutes.
- You can take them out once the tops are golden brown.
