This vibrant quinoa and mung bean salad is a refreshing, nutrient-packed dish, featuring a blend of spices, fresh herbs, and a tangy pomegranate molasses dressing.

Ingredients

  1. 1 cup of quinoa
  2. 1 cup of mung beans
  3. 1 teaspoon of ground turmeric
  4. Boiled corn
  5. Salt
  6. Dried basil
  7. Crushed red pepper
  8. Mint
  9. Parsley
  10. Pomegranate molasses
  11. Juice of half a lemon
  12. Olive oil
  13. Black olives

Instructions

  1. Boil the thoroughly rinsed quinoa in salted water for 15 minutes.
  2. Simultaneously, boil the mung beans in another pot.
  3. Once both are cooked and warm, drain and mix them together in a large bowl.
  4. Add the other ingredients and mix well.
  5. Garnish with corn, black olives, and parsley.
  6. Serve and enjoy!
