This vibrant quinoa and mung bean salad is a refreshing, nutrient-packed dish, featuring a blend of spices, fresh herbs, and a tangy pomegranate molasses dressing.
Ingredients
- 1 cup of quinoa
- 1 cup of mung beans
- 1 teaspoon of ground turmeric
- Boiled corn
- Salt
- Dried basil
- Crushed red pepper
- Mint
- Parsley
- Pomegranate molasses
- Juice of half a lemon
- Olive oil
- Black olives
Instructions
- Boil the thoroughly rinsed quinoa in salted water for 15 minutes.
- Simultaneously, boil the mung beans in another pot.
- Once both are cooked and warm, drain and mix them together in a large bowl.
- Add the other ingredients and mix well.
- Garnish with corn, black olives, and parsley.
- Serve and enjoy!
