This comforting potato soup, enriched with a creamy yogurt and egg yolk blend, offers a hearty, vegetarian dish with a touch of dill and a buttery finish.

Ingredients

  1. 2 potatoes
  2. 1 onion
  3. 3 cloves of garlic
  4. 4-5 tablespoons of olive oil
  5. Salt
  6. Black pepper
  7. 6-7 cups of water

For its Consistency

  1. 1 bowl of yogurt
  2. 1 egg yolk
  3. 1 heaping tablespoon of flour
  4. Juice of half a lemon

For the Topping

  1. Butter
  2. Dill

Instructions

  1. Cut the potatoes into small cubes.
  1. Grate the onion and garlic, then sauté them in olive oil.
  2. Add the potatoes and water.
  3. Adjust the salt and black pepper.
  4. After it starts boiling, cook for 20 minutes.
  5. Beat the dressing ingredients well.
  6. Take two ladles of soup and mix them into the dressing.
  7. Add the prepared dressing to the soup, stirring continuously to prevent curdling.
  8. Cook for another 10-15 minutes and then turn off the heat.
  9. Add finely chopped dill.
  10. Drizzle melted butter over the soup.
