Potato Salad

A delightful and healthy vegan potato salad, perfect as a snack or side dish. This salad combines mashed potatoes, sautéed carrots, fresh herbs, and a tangy lemon dressing, topped with a creamy yogurt and mayonnaise sauce. Garnished with red pepper flakes, mint, and corn, it offers a refreshing and flavorful experience.

Ingredients

  1. 1 kilogram of potatoes
  2. 2-3 carrots
  3. Half a bunch of dill
  4. 2-3 green onions
  5. Half a bunch of parsley
  6. 1 tablespoon of butter
  7. Half a lemon
  8. Black pepper
  9. Cumin
  10. Salt
  11. Olive oil

For Garnishing:

  1. Yogurt
  2. Mayonnaise
  3. 1 clove of garlic
  4. Red pepper flakes
  5. Mint
  6. Corn

Instructions

  1. Boil the potatoes. (You can add 1 tablespoon of vinegar to the boiling water)
  2. Peel the skins. Mash them in a deep bowl.
  3. Add the butter and mix.
  4. Grate the carrots and sauté them.
  5. Add them to the potatoes.
  6. Chop the green onions, dill, and parsley and add them.
  7. Add lemon juice, spices, and olive oil and mix.
  8. Line a tart mold with plastic wrap.
  9. Add the potato mixture and press it down to flatten.
  10. Let it sit in the refrigerator overnight. (2-3 hours is also fine)
  11. Turn it onto a serving plate.
  12. In a bowl, whisk the yogurt and mayonnaise. Add the crushed garlic.
  13. Spread it on top of the potato mixture. Garnish as desired.
