A delightful and healthy vegan potato salad, perfect as a snack or side dish. This salad combines mashed potatoes, sautéed carrots, fresh herbs, and a tangy lemon dressing, topped with a creamy yogurt and mayonnaise sauce. Garnished with red pepper flakes, mint, and corn, it offers a refreshing and flavorful experience.
Instructions
- Boil the potatoes. (You can add 1 tablespoon of vinegar to the boiling water)
- Peel the skins. Mash them in a deep bowl.
- Add the butter and mix.
- Grate the carrots and sauté them.
- Add them to the potatoes.
- Chop the green onions, dill, and parsley and add them.
- Add lemon juice, spices, and olive oil and mix.
- Line a tart mold with plastic wrap.
- Add the potato mixture and press it down to flatten.
- Let it sit in the refrigerator overnight. (2-3 hours is also fine)
- Turn it onto a serving plate.
- In a bowl, whisk the yogurt and mayonnaise. Add the crushed garlic.
- Spread it on top of the potato mixture. Garnish as desired.
