Pineapple Strawberry Cake

Indulge in a delightful Pineapple Strawberry Cake featuring a layer of caramelized pineapple slices with optional strawberry jam or sour cherry filling, topped with a moist cake batter made from eggs, butter, sugar, flour, and pineapple juice, creating a sweet, golden-brown treat.

Ingredients

  1. 7 slices of pineapple (I used canned)
  1. 150 grams of sugar
  1. 160 grams of flour (1 cup + 2 fingers' worth)
  1. 3 eggs
  1. 120 grams of butter
  1. 1 cup of pineapple juice (milk can be used as well)
  1. 1 packet of baking powder

For the caramel:

  1. 100 grams of sugar
  1. 4 tablespoons of water
  1. 5 drops of lemon juice
  1. 25 grams of butter

Instructions

Prepare the Caramel:

  1. Add the sugar and water to a pan, squeeze in the lemon juice, and do not stir. Instead, gently shake the pan occasionally.
  1. Once it starts to foam, add the butter and cook until thickened. Without waiting, pour the caramel into the baking dish and arrange the pineapple slices on top.

Prepare the Pineapple Filling:

  1. You can add strawberry jam or sour cherry to the holes in the pineapple slices for added color.

Prepare the Cake Batter:

  1. Whisk the eggs and butter together.
  1. Add the sugar and continue whisking.
  1. Add the remaining ingredients and whisk until smooth.
  1. Pour the batter over the caramel and pineapple in the baking dish.

Bake:

  1. Bake in a preheated oven at 170°C (338°F) for 35 minutes.
