Delight in these gluten-free quinoa cakes, featuring a rich cocoa flavor and a light, nutty texture, all made effortlessly in a slow cooker for a healthy and satisfying treat.

Ingredients

  1. 50 grams of quinoa (preferably ground in a food processor)
  2. 30 grams of coconut flour
  3. 1 teaspoon of coconut oil
  4. 1 tablespoon of cocoa powder
  5. 1 packet of vanilla extract
  6. 2 tablespoons of honey
  7. 2 eggs
  8. A handful of nuts (I used hazelnuts)

Instructions

  1. Separate the egg whites and beat them well.
  2. Melt the coconut oil and add it to the egg whites, then mix with the other ingredients.
  3. Distribute the mixture evenly into muffin cups (I made 5 muffins).
  4. Bake in a preheated oven at 180°C (350°F) for 20-30 minutes until ready. Enjoy!
