Quick and easy fried okra with a tangy yogurt sauce. This healthy, gluten-free dish features crispy okra sautéed with onions, tomatoes, and a blend of spices, perfect for a nutritious and flavorful meal.
Ingredients
- 1 kilogram okra
- 1 head of onion
- 2-3 tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon red pepper
- 1 teaspoon black pepper
- Salt
- 3-4 pieces of citric acid (lemon salt) or the juice of a quarter of a lemon
- 3-4 cloves of garlic
- 1 cup of hot water
Instructions
- Wash the okra thoroughly, then spread them on a kitchen cloth to allow them to drain well.
- Once drained, trim the tops of the okra using a knife.
- Sprinkle a little oil and salt over the okra, mix well, and cook in an air fryer or oven until golden brown.
- In a pot, add oil and sauté the onion until soft, then add the tomato paste, tomatoes, and spices in sequence.
- Add the okra, citric acid (or lemon juice), and garlic to the sautéed mixture.
- Add about 1 cup of hot water, cook for about 10 minutes, and it’s ready to serve.
