A flavorful vegetarian dish featuring dried okra simmered with sautéed onions, garlic, tomatoes, and a blend of tomato and pepper paste. Finished with a touch of lemon, this healthy main course is both hearty and satisfying.
Ingredients
- 1.5 strings of dried okra
- 1 large onion
- 2 cloves garlic
- 1 medium tomato
- Slightly less than half a tea glass of olive oil
- 1 teaspoon pepper paste
- 1 teaspoon tomato paste
- Salt
- Black pepper
- Half a lemon
Instructions
- Soak the dried okra in a bowl filled with hot water overnight. If you prefer, you can boil the dried okra on the day you plan to cook it.
- To prevent it from becoming slimy while boiling, add used lemon peels into the pot.
- In a pot, heat the olive oil and sauté the onion and garlic until they turn slightly pink.
- Add the peeled and diced tomatoes and stir.
- Add the tomato paste and pepper paste and sauté in the oil.
- Add the okra to the pot and mix well.
- Add hot water to cover the okra, then add salt, black pepper, and lemon.
- Cook for 30 minutes and then serve. Enjoy!
