Dried Okra Dish

A flavorful vegetarian dish featuring dried okra simmered with sautéed onions, garlic, tomatoes, and a blend of tomato and pepper paste. Finished with a touch of lemon, this healthy main course is both hearty and satisfying.

Ingredients

  1. 1.5 strings of dried okra
  2. 1 large onion
  3. 2 cloves garlic
  4. 1 medium tomato
  5. Slightly less than half a tea glass of olive oil
  6. 1 teaspoon pepper paste
  7. 1 teaspoon tomato paste
  8. Salt
  9. Black pepper
  10. Half a lemon

Instructions

  1. Soak the dried okra in a bowl filled with hot water overnight. If you prefer, you can boil the dried okra on the day you plan to cook it.
  2. To prevent it from becoming slimy while boiling, add used lemon peels into the pot.
  3. In a pot, heat the olive oil and sauté the onion and garlic until they turn slightly pink.
  4. Add the peeled and diced tomatoes and stir.
  5. Add the tomato paste and pepper paste and sauté in the oil.
  6. Add the okra to the pot and mix well.
  7. Add hot water to cover the okra, then add salt, black pepper, and lemon.
  8. Cook for 30 minutes and then serve. Enjoy!
