Delicate and golden crepes made from a smooth batter of flour, eggs, and milk. Cooked to a light, slightly crispy texture and perfect for folding or rolling with your favorite sweet or savory fillings.

Ingredients

  1. 2 eggs
  2. Slightly less than 2 cups of flour
  3. 2 cups of milk (you can use a mixture of half milk and half water if desired)
  4. 1 teaspoon of salt
  5. Butter or vegetable oil for cooking

Instructions

  1. To prepare the crepe batter, mix the flour, salt, milk, and water in a mixing bowl and whisk until there are no lumps.
  2. Add the eggs and whisk a bit more. The batter should be thinner than cake batter.
  3. Put about 1 teaspoon of butter or vegetable oil in a non-stick pan and spread it with a brush.
  4. Pour one ladle of crepe batter into the hot pan and tilt it to spread the batter evenly.
  5. Cook over medium heat, turning to cook both sides until lightly browned. Repeat this process until all the batter is used up.
