Delicate and golden crepes made from a smooth batter of flour, eggs, and milk. Cooked to a light, slightly crispy texture and perfect for folding or rolling with your favorite sweet or savory fillings.
Ingredients
- 2 eggs
- Slightly less than 2 cups of flour
- 2 cups of milk (you can use a mixture of half milk and half water if desired)
- 1 teaspoon of salt
- Butter or vegetable oil for cooking
Instructions
- To prepare the crepe batter, mix the flour, salt, milk, and water in a mixing bowl and whisk until there are no lumps.
- Add the eggs and whisk a bit more. The batter should be thinner than cake batter.
- Put about 1 teaspoon of butter or vegetable oil in a non-stick pan and spread it with a brush.
- Pour one ladle of crepe batter into the hot pan and tilt it to spread the batter evenly.
- Cook over medium heat, turning to cook both sides until lightly browned. Repeat this process until all the batter is used up.
