This quick and easy courgette appetizer is a healthy blend of sautéed zucchinis, strained yogurt, tahini, and lemon juice, finished with toasted sesame seeds, olive oil, and fresh mint for a delightful and refreshing starter.

Ingredients

  1. 2 zucchinis
  2. 1 heaping tablespoon of strained yogurt
  3. 1 heaping tablespoon of tahini
  4. Juice of half a lemon
  5. A quarter bunch of parsley
  6. Salt
  7. 2 tablespoons of cottage cheese
  8. 2 tablespoons of olive oil (for cooking the zucchinis)

For the topping:

  1. 2 tablespoons of toasted sesame seeds
  2. Fresh mint
  3. Olive oil

Instructions

  1. First, peel and dice the zucchinis.
  2. Place the zucchinis in a pan, add olive oil and salt, and sauté for 10 minutes, stirring occasionally until they turn lightly pink.
  3. At the end of the time, put the zucchinis in a food processor.
  4. Add all the other ingredients and blend.
  5. Transfer to a serving plate.
  6. Drizzle with olive oil, sprinkle with toasted sesame seeds, and add fresh mint. It's ready to serve.
