Quick & Easy
Indulge in these quick and easy Chocolate Chip Cookies with a delightful blend of rich chocolate, optional hints of espresso, and a satisfying crunch from optional nuts, all baked to golden perfection.
Ingredients
- 110 grams of butter or margarine (at room temperature)
- 2 large eggs (one whole, the yolk of the other)
- 1 cup of brown sugar
- 1/2 cup of white sugar (equivalent to 3 tablespoons)
- 1 teaspoon of baking soda or baking powder
- 1 teaspoon of salt
- 1 packet of vanilla
- 1.5 cups of chocolate chips (or chopped chocolate pieces)
- 2 cups of flour
- 3 teaspoons of Nescafe (espresso) (optional)
- 1/2 cup of crushed hazelnuts or peanuts (optional)
Instructions
- Make sure to beat the thoroughly softened, room-temperature margarine with the sugars until well combined and homogeneous. (Be careful not to overmix.)
- Then, add the eggs and beat for another 30 seconds.
- Add the flour, baking soda or baking powder, vanilla, salt, and Nescafe, and beat for another 20 seconds.
- Add the crushed or chopped hazelnuts or peanuts (these are optional) and mix with a spatula.
- Finally, add the chocolate chips and gently mix until just combined. Be careful not to overmix; just ensure the ingredients are evenly distributed.
- The dough will be softer than typical cookie dough. Using a spoon or your hands slightly moistened with water, shape the dough into small portions and place them on a baking sheet lined with parchment paper, leaving space between each piece.
- Ensure the pieces are not too thick or large, as they can spread and stick together.
- You can lightly press down on the dough, but it will spread as it bakes. Bake in a preheated oven at 170°C (338°F) for 17-19 minutes. (Baking times may vary, so it's best to keep an eye on them.) Enjoy!
