Indulge in these quick and easy Chocolate Chip Cookies with a delightful blend of rich chocolate, optional hints of espresso, and a satisfying crunch from optional nuts, all baked to golden perfection.

Ingredients

  1. 110 grams of butter or margarine (at room temperature)
  2. 2 large eggs (one whole, the yolk of the other)
  3. 1 cup of brown sugar
  4. 1/2 cup of white sugar (equivalent to 3 tablespoons)
  5. 1 teaspoon of baking soda or baking powder
  6. 1 teaspoon of salt
  7. 1 packet of vanilla
  8. 1.5 cups of chocolate chips (or chopped chocolate pieces)
  9. 2 cups of flour
  10. 3 teaspoons of Nescafe (espresso) (optional)
  11. 1/2 cup of crushed hazelnuts or peanuts (optional)

Instructions

  1. Make sure to beat the thoroughly softened, room-temperature margarine with the sugars until well combined and homogeneous. (Be careful not to overmix.)
  1. Then, add the eggs and beat for another 30 seconds.
  1. Add the flour, baking soda or baking powder, vanilla, salt, and Nescafe, and beat for another 20 seconds.
  1. Add the crushed or chopped hazelnuts or peanuts (these are optional) and mix with a spatula.
  1. Finally, add the chocolate chips and gently mix until just combined. Be careful not to overmix; just ensure the ingredients are evenly distributed.
  1. The dough will be softer than typical cookie dough. Using a spoon or your hands slightly moistened with water, shape the dough into small portions and place them on a baking sheet lined with parchment paper, leaving space between each piece.
  1. Ensure the pieces are not too thick or large, as they can spread and stick together.
  1. You can lightly press down on the dough, but it will spread as it bakes. Bake in a preheated oven at 170°C (338°F) for 17-19 minutes. (Baking times may vary, so it's best to keep an eye on them.) Enjoy!
