Instructions

  1. First, prepare the marinade for the chicken. In a mixing bowl, combine the olive oil, yogurt, tomato paste, black pepper, red chili powder, oregano, cumin, and salt. Mix well with a whisk.
  2. Add the chicken thighs to the marinade. Use your hands to ensure the marinade covers the chicken evenly.
  3. Once mixed, cover the bowl with plastic wrap and let the chicken marinate in the refrigerator for about 2 hours, allowing the flavors to absorb.
  4. Next, heat olive oil in a non-stick pan. Place the chicken thighs in the pan with the skin side down.
  5. Cover the pan and cook on medium heat until the chicken releases its juices, absorbs them back, and becomes golden brown. This usually takes about 20 minutes, but the time may vary, so keep an eye on it.
  6. Flip the chicken thighs and cook the other side on medium heat for about 10 minutes, or until it is also golden brown.
  7. The chicken thighs, with a delicious grilled flavor, are ready to serve. Enjoy!
