A vibrant and hearty bulgur salad, perfect for a comforting vegan meal. This salad combines fresh greens, crisp vegetables, and a flavorful mix of spices, pomegranate molasses, and olive oil. Sautéed onions and garlic with tomato paste add depth to the bulgur, making it a satisfying and nutritious dish.
Ingredients
- 3 lettuce leaves
- 1 bunch of parsley
- 3 green onions
- 1 tablespoon of olive oil (for sautéing the onion)
- 1 small cucumber
- 5 cherry tomatoes
- 1 medium green pepper
- Half a tea glass of olive oil (add more if needed)
- 1 tablespoon of pomegranate molasses
- Black pepper
- Red pepper flakes
- Cumin
- Salt
- 1 tablespoon of pepper paste
- 1 teaspoon of tomato paste
- 1 clove of garlic
- 1 small onion
Instructions
- First, we soak the bulgur with a small amount of hot water.
- Just enough water so that it absorbs immediately after pouring, then cover and let it sit for 5 minutes.
- In a small pan, sauté the chopped onion and garlic with 1 tablespoon of olive oil, then add the tomato paste.
- Sauté for another 2 minutes, then turn off the heat.
- Pour this mixture into the bulgur, and add all the spices, pomegranate molasses, and 1 tea glass of olive oil, then mix well.
- Add the finely chopped greens and mix well, then finally add the tomatoes and mix again.
- Serve and enjoy!
