Brussels Sprouts with Yogurt

Quick and easy Brussels sprouts with yogurt. This healthy, gluten-free dish features tender Brussels sprouts topped with creamy garlic yogurt and a drizzle of spicy butter. A nutritious and flavorful side that’s perfect for any meal.

Ingredients

  1. 1 kilogram Brussels sprouts
  2. 1.5 liters of boiling water
  3. 1.5 teaspoons of salt
  4. 2 cups of yogurt + a little salt
  5. 2 cloves of garlic
  6. 2-3 tablespoons of butter
  7. 1 teaspoon of ground red pepper

Instructions

  1. Remove and discard 2-3 of the outer leaves of the Brussels sprouts.
  1. Trim the stems slightly, rinse them thoroughly with plenty of water, and drain.
  1. In a large pot, boil water and add salt. Add the Brussels sprouts and cook over medium heat for 25 minutes until they soften.
  1. Be careful not to overcook them to the point of breaking apart; checking with a fork is enough.
  1. Drain the cooked Brussels sprouts and let them cool (if desired, you can rinse them in cold water and drain again; they will cool faster and remain firmer, but the choice is yours).
  1. Place the Brussels sprouts on a serving plate.
  1. Pour the garlic yogurt over the top.
  1. Drizzle the buttered red pepper over the top and serve. Enjoy your meal!
