This refreshing avocado quinoa salad combines creamy avocado, roasted red pepper, and fresh herbs with a tangy lemon and pomegranate molasses dressing for a quick and healthy vegetarian meal.

Ingredients

  1. 1 cup of quinoa
  2. 1 avocado
  3. 1 roasted red pepper
  4. Half a red onion
  5. 4 green onions
  6. 1 bunch of parsley
  7. Salt
  8. Pomegranate molasses
  9. Juice of 1 lemon
  10. Olive oil

Instructions

  1. Add two cups of water to the quinoa and bring it to a boil.
  2. Once it boils, reduce the heat and simmer until the water is absorbed and the quinoa is cooked.
  3. Peel the avocado and cut it into small cubes.
  4. Finely chop the red onion, green onions, and parsley.
  5. Dice the roasted red pepper into small cubes.
  6. Combine all the ingredients in a bowl.
  7. Sprinkle salt over the mixture and pour the lemon juice on top.
  8. Drizzle with pomegranate molasses and olive oil.
  9. Mix everything well.
