Artichoke with Quinoa

Enjoy the delicate flavors of tender artichokes filled with a fresh and zesty quinoa mixture, creating a light and satisfying vegetarian dish.
Ingredients
- 2 artichokes
- 1 small onion
- 1 lemon
- 4 tablespoons of cooked quinoa
- 1 sprig each of fresh mint and parsley
- Olive oil
- Salt, black pepper
- Half a stalk of green onion
Instructions
- Add plenty of olive oil to a pot. When the oil is slightly heated, add the onions cut into half-moon shapes and sauté until the onions are softened. (Over medium heat)
- Thoroughly wash the artichokes and place them in a bowl.
- Add enough water to cover the artichokes and rub them well with half a lemon. Let them sit in the water.
- Once the onions are sautéed, add the artichokes to the pot.
- Add enough water to half-cover the artichokes (you can use the water the artichokes were sitting in).
- Squeeze the remaining half lemon over the artichokes.
- Turn on the stove. Once the water starts to boil, reduce the heat and simmer until the artichokes are tender.
- When the artichokes are cooked, place them on a plate to cool.
- Put the cooked quinoa in a bowl.
- Add the chopped greens, spices, and a bit of olive oil to the quinoa. Mix well. You can also add pomegranate molasses and lemon juice if desired.
- Once the artichokes have cooled, place the sautéed onions from the pot on top of them. Add the quinoa mixture and serve.
